Here's a recipe that I just made for a very snowy day outside! We're supposed to get over 30 cm. and have freezing rain in-between!
Hope you like this - I LOVE it! And, it's so easy.
1/2 lb. ground beef, crumbled
1 cup frozen peas or green beans
1 medium onion, chopped
1 1/2 cups broken spaghetti, uncooked
1 clove garlic, minced
1 tsp. parsley
4 cups beef stock
3/4 tsp. salt
pepper to taste
1 can sliced mushrooms
1 bay leaf
1 medium can tomato paste
1/2 tsp. oregano
1/4 cup sugar
In large dutch oven, fry ground beef, onion, garlic and a little oil. Drain off any grease. Add remaining ingredients, cover. Let simmer about 25-30 minutes
*Comment: I tried this soup the very night Sis. Patty e-mailed the recipe. About the time that I was preparing Sis. Patty's Spaghetti Soup the cold front (we call them a "Blue Norther" here) that she mentioned had made it's way down to Texas, dropping the temperatures from 80 degrees F to around 40 degrees F.
This recipe has it all! Delicious (!!), easy, quick, and economical. It would be just as good without the meat for those who prefer meatless dishes. My family liked it so much I made it again to take to our shared supper at Wednesday night Bible Class. Everyone raved over it. LC ;-)
