GREEK POTATO SALAD

Here's a good potato salad recipe I got from a Mediteranian friend. It's very fresh tasting, low in fat (not a bit of mayonaise) and the best part is it's simple.

 

 

8 medium to large red potatos, boiled and cubed (you can leave the skins on)

1/4 cup olive oil

1/4 cup chopped fresh parsley

1/4 cup chopped fresh basil

2 chopped scallions

Juice of two fresh lemons

1 Tbsp. minced garlic

1/2 tsp. seasoned salt

1/4 tsp. pepper

1 tsp. sugar (Splenda works nicely too)

 

Make sure potato cubes are cooled before adding the rest of the ingredients.
