CHOCOLATE CHEESECAKE CUPCAKES

8 oz. cream cheese

1 large egg, beaten

1/3 cup sugar

1/8 tsp. salt

1 cup chocolate chips

1 tsp. vanilla

Blend cream cheese, egg, sugar and salt. Add chocolate chips. Set aside

 

3 cups flour

1 cup white sugar

1 cup brown sugar

2/3 cup dry cocoa

2 tsp. baking soda

1/2 tsp. salt

1 cup water

1 cup milk

2/3 cup oil

2 Tbsp. white vinegar

2 tsp. vanilla

8 oz. sour cream or plain yogurt

2 Tbsp. ground pecans

Combine all dry ingredients. Add last 6 ingredients to them. Fill 1/2 muffin paper w/chocolate mixture. Drop cream cheese mixture by a generous 1 Tbsp. at a time. Top with more chocolate mixture, being careful not to fill paper too full. Bake at 350 degrees for 20 minutes or until done - do not over bake or they will be dry.
