CHOCOLATE ZUCCHINI CAKE

3 cups grated zucchini
2 cups sugar
3 cups S.R. Flour
2 tsp. Carb Soda
3 Tbs. Cocoa
250gms (8.83 ounces or 1 cup + 2 Tbs.) Margarine
3-4 eggs
1/2 cup milk
vanilla
Melt margarine. Sift together S.R. Flour, Cocoa and Carb Soda, and mix with all other ingredients. Pour in margarine and mix well. Cook at 180 c (355 degrees F) for 35 - 40 minutes. *Makes a double mixture*
We used this recipe heaps this summer with all the zucchinis we had in the garden. You can use pumpkin or carrot instead of the zucchini.
