Tasty Salmon Quiche

This is an easy and nourishing dish based on the "impossible pie" technique.


half cup flour

5 eggs

60g (2.1 oz./ 2 rounded Tbs.) butter, softened

1 x 200g can red salmon, drained and flaked

1 onion, diced

freshly ground black pepper

60g (2.1 oz./ 2 rounded Tbs.) grated mature cheddar cheese


1. Place flour, eggs and butter in a food processor and process to combine.

2. Pour egg mixture into a pie plate. Top with salmon, onion and black pepper to taste. Sprinkle with cheese.

3. Bake in a moderate oven (180C, 350F) for 35 to 40 minutes or until mixture is set and top is brown.
