RAINBOW CAKE

Sister Rikke Clements

Houston Ecclesia, Texas

This cake is nice for Spiritual Birthdays or Baptisms. Making this cake is also a fun activity for children and can be tied into the lesson of Noah.

1 WHITE cake mix

Oil and/or eggs required by the mix (egg substitute works fine)

Food coloring

Bunt Cake Pan

Prepare cake mix according to directions. Divide mix into 6 parts (about 1 cup of mixture each). Add food coloring for the six colors (purple, blue, green, yellow, orange, red). Prepare cake pan according to the mix directions. Evenly pour in the batter starting with purple and ending with red. Bake according to instructions.

Of course there are 7 colors, and if you are an expert in food coloring mixing, you can separate the cake batter into 7 parts and put in the violet.

POWDERED SUGAR ICING:

1 cup sifted powdered sugar

1/4 tsp vanilla

Milk

In a mixing bowl stir together powdered sugar, vanilla, and enough milk to make a mixture of drizzling consistency (about 1 1/2 tbs.). Drizzle over top of cake.
