POTATO SALAD FOR A CROWD

Great for an Ecclesial dinner!

 

8 lbs. potatoes

1 cup Italian salad dressing

3/4 cup finely chopped onions

2 cups Miracle Whip

4 tsp. salt

2 cups chopped celery

1/2 tsp. pepper

12 hard cooked eggs, cup up

Cook peeled and cubed potatoes in boiling salted water until done. Drain. Cool slightly and toss with chopped onions, salt, pepper and Italian dressing. Cover. Chill thoroughly at least 8 hours.

About 2 hours before serving, add Miracle Whip, celery and chopped eggs: Toss until well coated. Chill. Makes 24 3/4 cup servings.
