PEANUT BUTTER COOKIES
Kitchener Ecclesia, Ontario, Canada
I found this recipe in a magazine while waiting in a doctor's office.
These are the best peanut butter cookies my family has ever
had.
Mix these together in large mixing bowl:
5 cups flour
1 tsp. salt
1 Tbsp. baking soda
2 tsp. baking powder
In another bowl:
Mix 1 1/2 cups Crisco with 2 generous cups of peanut butter. Add 2 cups granulated sugar and 2 cups brown sugar and mix well. Add 4 eggs, one at a time and 4 tsp. vanilla.
Add all to dry mixture (this dough is rather hard to mix, so you may have to mix it by hand).
Roll into balls, then in a bowl with sugar, then flatten on ungreased cookie sheet with fork.
Bake in 350 degree oven for 8-10 min.
[Before we could even get this recipe published here, Sis. Debi ("Crocker") had already baked up several batches of these delicious cookies to give to friends and to serve as refreshments at the (8/13/98) baptism of Bro. Jonathan Perry (Novi Ecclesia, Michigan). -L.C.]
