MANDARIN ORANGE COFFEE CAKE

Coffeecakes are one of my favorite things to make - so homey somehow!

 

1 pkg. Orange cake mix

1 pkg. (4 serving) vanilla instant pudding

1/2 cup vegetable oil

1 11-oz. can mandarin oranges (plus save juice and add orange juice to make make 1 cup liquid) 

4 eggs

1 tsp. vanilla

1 tsp. orange extract

Grease a 10" bundt pan. Combine cake mix, pudding mix, oil, eggs, vanilla, and orange extract. Beat at medium speed for 2 minutes. Add mandarin oranges and juice in the last 30 seconds. Pour in pan. Bake at 350 degrees for about 38-43 minutes. Do not dry out! Cool for 20 minutes. Invert onto plate and dust with icing sugar.
