Sticky Date Pudding with Butterscotch Sauce

1 1/4 cups (210g) seeded dates

1 1/4 cups (310ml) boiling water

1 tsp. bicarb soda

60g chopped butter

3/4 cup firmly packed brown sugar

2 eggs

1 cup (150g) SR Flour

 

Sauce

1 Cup (200g) firmly packed brown sugar

300ml cream

200g butter

 

Method

Combine dates & water in pan, bring to boil then immediately remove from heat. Stir in soda, allow to stand 5 minutes. Blend or process the date mixture with butter and sugar until almost smooth, add eggs and flour. Blend or process until just combined. Pour mixture into muffin tray or 1 x 20cm round cake pan. Bake in a moderate oven. Stand 10 mins before turning out of pan. Muffins - cook approx 20-25mins. Cake - cook approx 55 mins or until cooked through.

Sauce

Combine ingredients. Cook in microwave on medium heat until butter and sugar dissolved.

Makes 12-16 muffins.
