COBB SALAD

While on our one-year wedding anniversary vacation at Walt Disney World in Florida, my husband, Bro. Darren, and I tried this wonderful salad in one of the Disney restuarants. I will admit that at first glance we did not think the salad would appeal to us at all because it was all chopped up. But once we got past the appearance, it was very good.

We learned that the "Cobb" salad was named after a restuarant owner (named "Cobb") who lived earlier this century. Mr. Cobb had a severe toothache that prevented him from eating regular foods. Thus, his restuarant chopped this salad up very fine so he could eat it. Thus, the "Cobb" salad was born.


Your favorite salad (equal to about one head of lettuce). I usually use a package of pre-washed, pre-cut lettuce for convience.

One package oven roasted chicken or turkey lunch meat.

One hard tomato

Bacon Bits (optional, to taste)

3/4 - 1 cup shreaded cheese

1 medium avacado

In a food processor, finely chop lettuce, turkey or chicken, and tomato. Hand chop avacado into small pieces. In a large salad bowl, combine chopped mixture with cheese, bacon bits and avacado. Toss thoroughly. Chill and serve with your favorite salad dressing.
