CHILI SAUCE
Kitchener Ecclesia, Ontario, Canada
1 heaping quart tomatoes
6 large minced onions
1 hot red pepper (Optional)
1 sweet green pepper
scant 1/2 cup salt
3 cups sugar
3 cups vinegar
1 tsp. ginger
1 tsp. cinnamon
1/4 tsp. allspice
1/4 tsp. cloves
Put in all sugar and half the vinegar with tomatoes, onions, peppers and salt. Boil on med-high for 2 1/2 hours. Add rest of vinegar and spices. Boil 1/2 hour longer and put in sterilized jars. (Jars put in oven to get them hot enough to use oven mitts to take out and cool down).
