This is a very simple and quick appetizer recipe that comes from my grandmother, who is Latvian, and it is one of my most cherished recipes. These filled pastries make for a yummy quick snack for little ones. Loaded with calories, but very delicious.
1/2 lb. butter (or margarine)
2 cups all purpose flour
3/4 cup sour cream
Cut butter into the flour and mix in sour cream. Knead until smooth. Refrigerate for about 1 hour. Roll out to about pie crust thickness (about 1/4") and cut out circles with cookie cutter or just a drinking glass.
Fill each circle with desired filling. Fold pastry over filling and pinch edges to seal. I have also filled one circle and topped with another, then pinched the two together. Works just as well, even tastier because you get more filling. Bake at 400F for about 1/2 hour, or until light golden brown.
Fillings:
-cooked chopped bacon
-cooked ground beef or shredded beef (great with left over stew meats and/or vegies)
-cottage cheese mashed, raw egg and sugar to taste (sweet cheese filling)
-any cheese
-mashed potatoes and onion
-fruit filling
-just about anything you can imagine....
