BLUEBERRY RECIPES

My husband, Bro. Jim, and I lived in Newfoundland for 13 years. We had blueberry bushes on our land while we lived there, and our children used to pick them for the whole month of August. We had lots to put away, too. The blueberry is smaller and sweeter there.   These blueberry recipes are authentically Newfoundland, and they're good!

BLUEBERRY CRISP

3 c. blueberries

2/3 c. sugar

l Tbsp. flour

3 Tbsp. margarine

1/4 c. brown. sugar

1/4 c. flour

3/4 c. oats

Put blueberries in greased baking dish and sprinkle with 2/3 c. sugar and 1 Tbsp. flour. Cream margarine, add brown sugar and cream well together. Blend in flour and oats to make crumbly. Sprinkle this on top of the berries. Bake at 375 degrees until berries are soft & top is golden for 40 minutes.

 

STEAMED BLUEBERRY PUDDING

This recipe for Steamed Blueberry Pudding is a favorite of "Newfies". They would serve this on a Sunday or (as they typically have large families) just a dessert on a weekday. I find it a bit heavy, so a small helping goes a long way.

MIX TOGETHER:

1/2 c. margarine

1/2 c. brown sugar

1/2 c. molasses

ADD:

1/2 c. hot water

1 tsp. soda

1 tsp. cinnamon

Add enough flour for stiff dough. Add 2 c. blueberries. Steam for 2 hours.

You can make a lemon sauce or blueberry sauce to serve over it, or it can be served just with cream.

 

BLUEBERRY UPSIDE-DOWN PUDDING

1 1/2 c. flour

3 tsp. baking powder

3/4 c. sugar

1/2 tsp. salt

3/4 c. milk

1/4 c. margarine

1 egg, slightly beaten.

Sift flour, sugar, baking powder & salt. Cut in margarine. Make hollow in middle of mixture and add milk mixed with egg. Combine until moistened well. Spread this mixture over the following combined ingredients (which have been put in a 9"-10" greased high pan or corning ware dish):

2 c. blueberries

1 tsp. lemon rind

1/2 c. sugar

Bake 45-50 minutes at 350 degrees.
